I am so excited to share one of my favorite Fall recipes with you!
I call them “Pumpkin Chocolate Chip Muffins”.
Or sometimes I call them “So Good I Can Eat All 24 Of Them” muffins.
My friend, Lori, has been making these muffins for years, and I have been the very happy recipient of these morsels of divine pleasure on many an occasion.
After begging her for the recipe every time she made them, she finally coughed it up.
She said they are actually called “Kari’s Muffins”, but I don’t know Kari, so I like to keep it personal and call them “Lori’s Muffins.” :)
Here is the recipe:
Lori’s Pumpkin Chocolate Chip Muffins
3 c. all purpose flour
2 c. granulated sugar
2 T. Pumpkin Pie Spice *
2 t. baking soda
1/2 t. baking powder
1/2 t. salt
4 eggs
1 15 -16 oz. can of pumpkin
1 c. melted butter
1 bag semi-sweet chocolate chips
(* If you don’t have Pumpkin Pie Spice, you can make your own by mixing together: 1/2 t. ground cinnamon, 1/4 t. ginger, 1/8 t. nutmeg, and 1/8 t. all spice.)
1. Mix flour, sugar, pumpkin pie spice, baking soda, powder, and salt.
2. In another bowl, mix egg, pumpkin, and butter. Stir in chips.
3. Pour wet ingredients over dry and fold in until moistened.

4. Grease pan or use muffin cups.

5. Bake at 350 degrees for 20-25 minutes.

These are great little treats to package up and give to your friends or co-workers.
I bought some little fall treat bags from Walmart to put each muffin in and tied them up with jute string.
Then I added a little pumpkin card that I printed off my computer to wish my co-workers a Happy Friday! (I know some of you crafty people out there could come up with a cuter card, but it’s the thought that counts, right?) :)
