Yummy Pumpkin Chocolate Chip Muffins!
I am so excited to share one of my favorite Fall recipes with you!
I call them “Pumpkin Chocolate Chip Muffins”.
Or sometimes I call them “So Good I Can Eat All 24 Of Them” muffins.
My friend, Lori, has been making these muffins for years, and I have been the very happy recipient of these morsels of divine pleasure on many an occasion.
After begging her for the recipe every time she made them, she finally coughed it up.
She said they are actually called “Kari’s Muffins”, but I don’t know Kari, so I like to keep it personal and call them “Lori’s Muffins.” :)
Here is the recipe:
Lori’s Pumpkin Chocolate Chip Muffins
3 c. all purpose flour
2 c. granulated sugar
2 T. Pumpkin Pie Spice *
2 t. baking soda
1/2 t. baking powder
1/2 t. salt
4 eggs
1 15 -16 oz. can of pumpkin
1 c. melted butter
1 bag semi-sweet chocolate chips
(* If you don’t have Pumpkin Pie Spice, you can make your own by mixing together: 1/2 t. ground cinnamon, 1/4 t. ginger, 1/8 t. nutmeg, and 1/8 t. all spice.)
1. Mix flour, sugar, pumpkin pie spice, baking soda, powder, and salt.
2. In another bowl, mix egg, pumpkin, and butter. Stir in chips.
3. Pour wet ingredients over dry and fold in until moistened.
4. Grease pan or use muffin cups.
5. Bake at 350 degrees for 20-25 minutes.

These are great little treats to package up and give to your friends or co-workers.
I bought some little fall treat bags from Walmart to put each muffin in and tied them up with jute string.
Then I added a little pumpkin card that I printed off my computer to wish my co-workers a Happy Friday! (I know some of you crafty people out there could come up with a cuter card, but it’s the thought that counts, right?) :)

Yummmmmmm….. I have Diverticulitis and have been on a liquid diet fir 3 days and looks like I will be for a few more days. I nearly had to stop mysel from licking the pictures they looked so delicious;) Have a wonderful Monday too!!
What size can of pumpkin?
I think it is about a 15 -16 oz can. The smaller size…not the big one. ;)
You listed baking soda twice. Should it be 2 t or 1/2 t?

Haha… my secret is officially out! Hope everyone enjoys these! We cannot get enough around our house… the pumpkin shortage last year nearly killed us all.
the recipe sounds delish! i have been living in Italy for a while and it’s impossible to find canned pumpkin.. do you know whether i can just boil fresh pumpkin or squash, strain it and puree it and use it as a substitute? i simply adore everything pumpkin and i have serious withdrawals :)
The recipe for the pumpkin spice mix only makes 1t , yet the recipe says to use 1T.
Is that a typo? Which do I use? They look great and I copied the recipe. Love you bag presentation.

I always just use the pumpkin pie spice. Maybe you could double the pumpkin spice “mix” to get it to work.

Would these freeze well? I am trying to make foods to freeze before baby gets here so that I’m not stressed about cooking after she is born.
