I love Strawberry Icebox Cake…. A Strawberry Supreme Cake mix or A Yellow Cake mix, made by following regular instructions for 9X13 pan. Take strawberries (about 3-4 cups) clean, hull, cut into chunks, mash and add sugar to taste. Let sit while cake cools in pan. Mix a package of vanilla pudding, 1 cup of milk. Stir for 2 minutes. Fold 1 tub Cool-Whip in to pudding, set in fridge. When cake is cool, take wooden spoon handle and poke holes in cake, add strawberries and juice to top of cake. Then frost w/ pudding/cool-whip. Cover and set in fridge for a few hours. Just before you serve garnish w/ whole strawberries cut into slices! (Keep leftovers in fridge if you have any!) Oh. My. Goodness!! Best desert for a summer cook-out/bbq or Church gathering!! Enjoy!
We love Rhubarb Strawberry jam. It’s very simple to make. {Wal.Mart brand jello is gluten free, so it’s great for the family member who can’t have gluten.}

I recently made a lemon pound cake from a Betty Crocker Super Moist box mix. I used as the cake and layered my strawberries, juice, and whipped cream on top. I really liked the added flavor from the lemon. Pound cake recipe is here: http://www.bettycrocker.com/recipes/lemon-pound-cake/290a381e-2238-48d9-9b02-a6ce2c2c205d
