World’s Best Caramel Popcorn {The Perfect New Year’s Party Food!}

I just spent three wonderful days with my in-laws from Georgia!  We had a house full of loved ones, and it was awesome!

My sweet sister-in-law, Sarah, makes the most delicious caramel popcorn I’ve ever tasted!  It’s a special family recipe.  I asked her if she would make some while she was here, so I could share it with my readers.  She graciously said “yes.”  Smile

This caramel popcorn would make the best snack for any type of get together.  I am going to make some for New Year’s Eve.

Here are the ingredients:

2 cups of brown sugar packed

6 quarts of popped popcorn {3 to 4 bags of microwave popcorn}

2 sticks of butter

1/2  cup of corn syrup

1 teaspoon of vanilla

1/2 teaspoon of baking soda


Step 1:  Pop popcorn in the microwave and place in large casserole dishes.  Set aside.

Step 2:  Melt two sticks of butter in a large pan on medium high heat.

Step 3:  Add two cups of packed brown sugar to the melted butter and stir.

Step 4:  Add 1/2 cup of corn syrup to the pan and stir.  {LOVE my new West Elm owl measuring cups from my Secret Santa, Melissa, from The Inspired Room!}

Step 5:  Bring mixture to a boil on the stove top.  Boil, while stirring, for 5 minutes.

Step 6:  Take off heat and add vanilla and baking soda.  Stir until it fluffs up.

Step 7:  Pour mixture over popcorn.

Step 8:  Toss popcorn to coat.

Step 9:  Bake at 250 degrees for 1 hour, tossing with a fork every 15 minutes.

Step 10:  Join Eli in starring at the popcorn goodness as it bakes.

Step 11:  Remove from oven, let cool, and

My wonderful in laws are visiting from Georgia, and we are enjoying spending time with them.

Cy and I worked really hard to get a lot of things finished on the house before they came, and I will have to say that our home is the best it has looked since we moved here a year and half ago.

It’s not finished, but definitely looks “homey.”

We finished the guest bathroom, and I LOVE it!  I will share pictures of it with you next week.  Smile

Merry {the day after} Christmas!



Guys, THANK YOU so much for all the prayers and well wishes for me on my last post!!!!

You have no idea how much it meant to me.  I wish I could email every single one of you back to say thank you, but I’m afraid I won’t have the time.  So I am praying that you see this post and know how much it meant to me!

I have had a head cold since Saturday night that has been a doo-sey.  {I have no idea how to spell that word.}  Smile

I’m still not feeling 100%, but I think I am on the mend.

I have pretty much shut my computer down for the past week.  That is a record for me for sure!  But when your head is poundin, the last thing you want to do is stare at a computer screen, ya know?

Unfortunately, because I was under the weather, I didn’t take a lot of pictures the past few days either.  But I did get a few on Christmas Eve, at Dad and Janet’s, that I wanted to share with you.

I really can never say enough about how much of a blessing Janet has been to our family!  She loves us all so much, and I know that my mom would be so happy to see how she takes care of us, especially Dad.  God is so good.


Here is my delicious great nephew, Colt.  He throws his hands in the air, and we all say, “Yay, God!” after we pray.  He had a cute Christmas outfit on at the beginning of the night, but he loves walking around in his diaper best.  Smile

Christmas morning, the boys sat on the couch and opened the little presents that had bought for each other.  They were soooo cute.  It was my favorite part of Christmas morning.

After the opened their gifts from each other, they tore into their gifts from Santa.

Jonathan got an new electric guitar and amp, Luke got a new digital video camera to use for his youtube channel on Leopard Geckos  Smile, Adam got an electric scooter, and Eli got a LeapPad.

It was a great Christmas.



That evening, we went to my sister’s house to eat.

I am sooo excited because tomorrow, my husband’s side of the family is coming to our house to visit!

His parents and both of his sister’s and their families are coming, and it is going to be a BIG time.  We do not get to see each other as often as we would like because they live in Georgia, and we miss them so much.

It’s going to be some more great family time, and I will take some pictures to share with you soon.


We are supposed to get some snow here in KY today, and I can’t wait!

Life threw me a curve ball



I cannot believe I have not posted anything since last Wednesday!!

I mean, seriously.  I don’t know when the last time that happened!

Well……ya know how ya never know what a day will bring ya?

That was true for me last Thursday.

I never in a million years thought I would spend 4 hours in the emergency room that day.  But I did.

That morning, I woke up with a TERRIBLE headache, but Dad was coming over to watch the boys for a few hours so I could finish my Christmas shopping.  {And I had a LOT left to do!}

So I took some ibuprofen, but on my game face, and went shopping.  It was raining cats and dogs that day, which does not make for a great day of shopping.  I stopped at ToysRUs first to knock some things off my list, and thankfully it  wasn’t that crowded.

But my headache would NOT go away.  It actually kept getting worse.  So bad, in fact, that I began feeling nauseous.  I was getting so frustrated.  A headache, a down pour, and a long shopping list do not make for good buddies.

I had gotten as much as I could get done before I felt like I was going to vomit in the car.  I cried to Cy on the phone because still had some stores to go to, and I knew I wasn’t going to make it.  Maybe I had the flu?

Around 11:00 am, I called Dad and told him that I was going to swing by my doctor’s office and see if I could get checked for the flu.  He said that was fine.  I called Cy and cried some more on the phone because I felt soooo bad.  I really didn’t know if I could make it to the doctor before I threw up.

Within the next 5 minutes, things took a turn for the worse.  My arms and legs began going numb.  I really began freaking out.  Quickly after my arms went numb, my fingers began to cramp and get stiff.  I couldn’t even bend my fingers to grip the steering wheel!

Y’all, I would like to say I remained calm, but I didn’t.  I was crying hysterically thinking that I was having a stroke or something was terribly wrong.  I had never experienced anything like that.

I made it to the doctor’s office, but could barely feel my legs and had trouble walking in the front door.  I bypassed the check in line and walked straight to the door in the waiting room.  I saw a nurse, and began to cry.  I told her I felt like I was going to pass out and that I couldn’t feel my arms and legs.  She immediately led me into a room, and the nurse began to talk my blood pressure and do an EKG on me.  They called an ambulance and said I needed to go to the ER.  I was having a lot of trouble breathing, and finally threw up in the waiting room.  {To which I kept apologizing to the nurses for doing so.}

I threw up in the ambulance too.

I kept crying and asking someone to “help me.”  I just wanted to the feeling back in my arms and legs.

Long story longer…

They took me to the ER and hooked me up to an IV and checked a million things.  Cy got there as they were wheeling me into the Emergency room.  He was a mess as well.

My sister got there shortly after, and I cried when I saw her.  In one glance, we both knew in our hearts that we wish Mom was there.

I was told that my CO2 was at a very dangerous level, and I had been hyperventilating.  They made me breath in a bag for a while.  The medicine they gave me in my IV made me feel better within about 30 minutes, and I had all the feeling back in my arms and legs and the nausea went away.

They also did a CT scan on me to make sure it wasn’t anything neurological, and it  came back clear.

Soooo, the doctor feels that I had a severe migraine that caused me to get sick. Then, when I began hyperventilating, I was taking in to too much oxygen and not releasing any CO2 which caused my arms and legs to go numb and my fingers to cramp.

Weird, right?

I have to go see a neurologist and my obgyn to get my hormones checked.

Isn’t it lovely getting older, ladies?!

So that is why I haven’t posted, or been on social media, or answered any emails.  I’ve needed some rest, and I’ve done my best to get some.

Unfortunately, I now have a head cold, and have felt terrible all day today.  Sad smile

But I will tell you friends, in light of what others have had to endure the past two weeks, I cannot complain at all.  My life has been inconvenienced by a scary trip to the ER and a bad head cold, but I still have so much to be thankful for this holiday season.

I don’t have everything checked off my Christmas list, and I haven’t been able to do all the traditions that I love right before Christmas, but I will still celebrate.

Cause Christmas is WAY more than presents, more than traditions, more than spending time with family and friends, more than a spirit of cheer, more than holiday tunes, more than any of that.

Christmas is about God’s great love for us.  So great, that He came to earth as a baby to live and die and to demonstrate His love for us.

He is our Joy during times of pain.

He is our Strength when we are weak.

He is our Hope when we think we have none.

He is our Peace in times of turmoil.

Those are the gifts I am celebrating this Christmas.

The Storm before the Calm

We are in the midst of FINALLY moving the boys out of their small rooms into their new rooms upstairs!  But in the meantime, that means a lot of stuff in transition.

We’ve been having a big family slumber party in our bedroom!

I moved their stuff out of their old rooms so I could get the walls painted and get those rooms ready to be a playroom and office.

So this is our STORM before the CALM.

Sometimes when you are renovating your home, it has to get REALLY messy before it gets cleaned up, ya know?

But I am so happy with this mess {except that it is the week before Christmas}, because it means we are thisclose to getting the boys in their rooms and getting our house almost finished.

It’s a little humbling to show you this mess, but it is what it is.

I am happy to report, though, that as of today most of this stuff has made it way into it’s new home.

The mattresses and dressers are now upstairs, but nothing is decorated downstairs.

Oh well, we are getting there.

Hopefully, I will be able to have some decorating fun in 2013. Smile


The boys did not want to use their bunk beds in their new rooms, so I have two for sale.

This was Adam and Eli’s bunk bed.  It was in my mom’s house in the “grandchildren’s room.”  It is a twin over twin and has a trundle to go with it.  I think the trundle has a wheel that has come up.  We didn’t need it, so it is in storage.  I am asking $300 for it.

This is the dark walnut twin over full.  The safety guard rails on the top bunk are broken and need to be fixed, but other than that, it is in good shape.  I am asking $200 for it.

Easy and Inexpensive Energy Saving Tip!


Hey Friends.

I hope you are doing well.  I know you are probably equally heavy hearted over the school shooting.  It is amazing how quickly our perspectives and priorities change in the face of such a tragedy.  All of my holiday stresses just don’t seem quite as important, ya know?  I feel a little guilty that it takes the loss of so many lives to make me focus on what is really most important this Christmas season.  Forgive me, Lord.

I was supposed to publish this post {per my contract with The Home Depot} on Saturday, the day after the shooting.  However, it just seemed so trivial to talk about energy saving tips in the light of what had just happened.

So I asked if I could wait until today to publish this post, and they graciously said yes.  Thank you, Home Depot, for being sensitive to this matter.


I have been so grateful to be a part of The Home Depot “Celebration of Service” program.  It has been four months of wonderful and meaningful experiences.

Insulate your light switch and outlet covers.

Have you ever put your hand over an outlet or switch plate on an exterior wall? You can often times feel the cold air coming through the outlet or switch plate. That’s not cool. {No pun intended.}

Insulating outlets and switch plates is one of the easiest and most inexpensive things you can do to eliminate heat loss without having to re-insulate your entire home.

No Words

I have rolled around words in my head of what I should say to you about the tragic school shooting in Connecticut, but I truly do not have any words.

As a former teacher and a mom, my heart is breaking.

I am praying for each family member and the loved ones of the victims.

I am praying for our country to see how desperately we need Jesus.

I am praying for God to heal broken hearts.

And on Monday, my blog will sit silent in remembrance of those that were lost.
