Slow Cooker Potato Soup
In the fall, I would eat soup every day of the week if I could! I absolutely love soup! So I was so excited when Ruthie shared this post with me. I know you will love all of her fall inspired recipes and her special announcement at the bottom of this post!

I can hardly believe that Autumn weather is here, the leaves are turning around our neck of the woods and it’s put me in the mood for some delicious savory soups…
AND what’s better than a delicious savory SLOW COOKER soup?! Not a whole lot, in my book. I love to throw it together in the morning and walk in that evening to dinner-ready-to-go :)
Slow Cooker Potato Soup is perfect for a fall day or pretty much any day for that matter!
- 10 red potatoes, cubed
- 1 large onion, diced and sautéd in butter
- 5 cups water
- 3 Tbsp chicken bouillon
- 1 tsp minced garlic
- 1 Tbsp ranch dressing mix
- 2 tsp dried parsley
- salt and pepper to taste
- 1 package of real bacon bits
- 1 cup half and half
- 1 cup Cheddar cheese
- 1 cup light sour cream
- 1/4 cup chives or green onions
- Place the first 9 ingredients in the crock pot.
- Cover and cook on high for 4 hours or low for 8 hours.
- The potatoes should be tender.
- Stir in half and half, cheese, sour cream and chives or green onion.
- Heat through and serve.

I have an old Chambers stove and this will be perfect in the Thermowell! Love potato soup and really all soups and stews. The skinny pumpkin bars look delish as well. I need to revisit her site. as she seem to have a similar food aesthetic for home-style cooking. CTD

Just made lentil soup with onions, garlic, spinach, lentils and chicken fillets…. I could eat soup

How much is one package of real bacon bits. I buy a big package at Sam’s? Is it a cup ?
Hi Julie… I’m sorry, I should have specified the package size on the bacon bits. I used the 3 ounce size which is just over a 1/3 a cup. You’ll love this soup! Enjoy.

I just dumped a whole packet of ranch mix in will it. E to salty? Any recommendations for Making it better?
