Keto Friendly Bacon Cheddar Jalapeño Poppers!

Y’all, I hope you are having a great week!  It is cray-cray over here because it is the last week of school, Jonathan is home because he graduates on Friday, my niece is having her baby on Friday, and we are hosting a graduation party on Saturday!!! 

Heaven help me!  

Anyway, I am still chugging along on my keto eating plan, and I am steadily losing weight…ounce by ounce…haha!

I made these Jalapeño Poppers the other night, and they were soooo delicious!  I snapped some pictures of them on my phone so I could share them with you!

Here are the ingredients:

  • 5 slices of bacon (or you can use the packaged bacon bits/pieces, if you prefer)
  • 6 jalapeno peppers
  • 3 ounces cream cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 t. garlic powder

STEPS:

  1.  Cook the bacon in a skillet and put on paper towel to cool.  Chop into bits.
  2. Pre-heat oven to 400 degrees and line a baking sheet with parchment paper.
  3. Slice the peppers in half and scoop out the seeds.
  4. In a medium bowl, use a fork to combine the cream cheese, cheddar cheese, garlic powder, and bacon bits.  Spoon some of the mixture into each jalapeño half
  5. Bake for 18 – 20 minutes, until the cheese is melted and slightly crisp on top.  

These are sooooooo good, and only about 2.6 net carbs for 4 peppers.  YUM!  I love to dip mine in sour cream, but they are good on their own too.  :)

  2. We’ve all heard “check with your doctor before starting any diet” but seriously does anyone really do that? I think those poppers look absolutely delicious, but after my last check up I can’t eat anything like that. My cholesterol is above normal 😩. I sincerely hope you’re monitoring your cholesterol. I don’t say this to be discouraging, dieting is sooooo hard and I applaud anyone who can stick with it, I say this out of concern.
